Green asparagus salad



Looking out of our apartments window its rainy and windy outside. Its that kind of day where you just wanna hide under your blanket, watching movies and drinking lots of warm chai. By looking in our almost empty fridge with some fresh green asparagus this super delicious and simple green asparagus salad got our dinner in bed on that cozy autumn day. My boyfriend and I fell in love with the recipe and it has become one of our absolute favorite autumn/winter salads. We love the salad together with some warm baguette or as side dish to a meat or fish main course.


Green asparagus salad


serves 2 salad bowls

Between 70-100g fresh spinach, rinsed – can be replaced by any kind of salad
One bunch of green asparagus, rinsed
1 avocado
10 small tomatoes, rinsed
100g feta
Pine nuts

For the sauce:
1/2 tbsp. olive oil
1 tbsp. balsamico
1 tsp. mustard
1 – 2 tsp. honey


Preheat oven to 200 degrees celsius
Place green asparagus on a lined baking sheet and drizzle with oil, salt, pepper and roast in the oven until tender, approximately 20 min. Let them cool down for some minutes.
Roast pine nuts in a pan
Cut the avocado into small slices
In a bowl place the spinach, avocado, tomatoes and asparagus. Drizzle with feta, pine nuts salt & pepper.

For dressing:
In a small bowl mix all ingredients until well combined. Season with salt & pepper. Drizzle over your salad.

Especially for the vegetarians under you, you can sprinkle your spinach with some lime or lemon to enhance the iron bioavailability from the spinach (read more about it here)!

If you like you can enjoy the salad to fish, meat, warm baguette or stir in some cooked bulgur, couscous or rice 🙂
