Warm Apple Porridge with whipped Coconut Cream

This time of the year it’s really cold in Denmark. Especially in the mornings it’s super cold and dark outside. I feel like that during those months it’s important to take extra care of ourselves. It’s important that we learn to listen to our body accept and be gentle to it, to keep a healthy mindset. I have written down some of the things that I love doing and hope that some of them can be an inspiration to you.

One of the things is to start my mornings with this super easy and super delicious warm Apple Porridge with whipped Coconut Cream. Since you can prepare everything the evening before you simply just need to warm up the porridge, spice it with some of your favorite spices and fill your body up to keep you warm and full during the morning.

Inspirations for a healthy mindset:

  • A nice massage – my favorite is Thai massage
  • A weekend getaway (doesn’t have to be far)
  • An appointment at your favorite hairdresser  
  • A piece of your favorite cake  
  • A long walk with a warm chocolate + whipped cream afterwards
  • Do some Yin yoga
  • Take on some warm running clothes and go for a morning run (doesn’t matter how long or how fast)
  • A serving of Warm Apple Porridge with whipped Coconut Cream in the morning  
  • A reservation at your favorite restaurant together with your loved once for a cozy evening or invite for a cozy evening at yours (creating a delicious dinner together)

Warm Apple Porridge with whipped Coconut Cream

Inspired by the book “Power Snacks” by Jenna Zoe 
Serves 1

Ingredients:

40g oats (gluten free if you like)
150g unsweetened applesauce
½ tsp nutmeg
½ tsp. cinnamon (optional)
½ tsp vanilla sugar or extract
3tbsp almond or soymilk
1 can full fat coconut milk, stored overnight in refrigerator
2-3 tbsp maple syrup
5-6 walnuts, chopped
Vegan caramel sauce (optional)

Porridge

In a bowl mix together the oats with the applesauce and in an airtight container store overnight in the fridge.
In the morning fill your overnight porridge into a saucepan add the milk, vanilla sugar, cinnamon and nutmeg.
Mix all together until well combined.
On low heat slowly warm up the porridge (approximately 5 min.)
Fill into your breakfast bowl and top with whipped coconut cream, walnuts and if you like drizzle with vegan caramel sauce -> Enjoy!

Whipped Coconut cream

makes a lot more

Take your coconut milk out of the fridge and scrape out the top, thickened cream and leave the liquid behind (reserve for use in smoothies).
Place hardened cream in your mixing bowl.Beat for 30 seconds with a mixer until creamy.
Then add maple syrup and mix until creamy and smooth – about 1 min. Taste and adjust sweetness as needed.
Use immediately or refrigerate up to 1- 2 weeks.
